Oh deer, Christmas is here! It’s a festival of joy and loving, but there’s also work to do! Relax on the workload with some easy DIY Xmas dessert recipes. Even better, these Christmas desserts are super healthy too, so forget about that festive flab! The best part? These are so delicious, the family won’t even know they’re eating healthy! Hold your Reindeers, the Xmas delights are here!

Mini_strawberry

1. Mini Strawberry Tarts

These bite sized desserts promise to be a delicious neat little treat. Small in size, but packing a flavourful punch, tarts are the way to go this Xmas!
To make yourself a tasty batch of 32 tarts you will need –

Ingredients

– 1 packaged refrigerated sugar cookie dough
– 1 packaged less-fat cream cheese (block style)
– ¼ cup of sugar (yup, that’s all!)
– Zest of one orange
– ½ teaspoon vanilla extract
– 32 fresh strawberries

Instructions

I. Preheat oven to 350°. Coat a mini-muffin tin with nonstick cooking spray.
II. Divide sugar cookie dough into 32 pieces. Coat hands in flour, and roll pieces into balls.
III. Press each ball into tin, forming dough up and around into the shape of a tart.
IV. Bake for 11–12 minutes or until golden. Let cool for 10 minutes in pan.
V. Remove tarts, and cool completely.
VI. Using an electric mixer, combine cream cheese, sugar, orange zest, and vanilla.
VII. Spoon cream cheese mixture into each tart. Top each with a fresh strawberry.

Coconut

2. Coconut Lemon Minis

We believe, with the huge spread of food at the table for Christmas, mini treats are the best way to top it off! These bite-sized desserts are easy to make and easy to eat. No mess, no stress!
To make 38 mini cupcakes you will need –

Ingredients

– 1 ¼ cups cake flour
– ½ cup all-purpose flour
– ½ cup sugar (only!)
– ¾ teaspoon baking soda
– ¼ teaspoon salt
– ¾ cup flaked sweetened coconut
– 1 teaspoon lemon zest
– 2 tablespoons unsalted butter (melted)
– ¼ cup canola oil
– 1 cup low-fat buttermilk
– 1 egg
– 1 egg white
– 1 cup coconut flakes (for garnish)

Instructions

I. Preheat oven to 350°F. Place 38 miniature muffin cup liners in miniature muffin tin
II. Place both flours in a bowl. Sift sugar, baking soda, and salt into bowl. Stir in coconut and lemon zest.
III. Whisk butter and oil. Add buttermilk and next 3 ingredients (through coconut extract), whisk until well-combined.
IV. Add dry ingredients to wet.
V. Divide batter evenly among liners, and bake in oven for about 15 minutes.
VI. Cool for 5 minutes. transfer to wire rack to cool.
VII. Frost cakes, and garnish with toasted coconut.

Chocolate_marble

3. Chocolate Marble Cake

Throw a surprise with this delicious cake! Use Raw Pressery’s Almond milk from our Go Nuts bundle. No occasion is complete without a cake, especially Christmas! This dessert is a cakewalk!
To make this dessert you will need –

Ingredients

– Baking spray
– 2 cups all-purpose flour
– 1 cup whole wheat pastry flour
– 1 ½ teaspoon baking soda
– ¼ teaspoon salt
– 1 cup + 1 tablespoon sugar (divided)
– 1 cup light sour cream
– 1 glass almond milk (we recommend our healthy blend)
– ½ cup applesauce
– 1/3 cup unsalted butter (melted)
– 1 ½ teaspoon vanilla extract
– 30g of unsweetened chocolate (melted)
– 1 tablespoon cocoa powder

For the heavenly glaze

– ½ cup powdered sugar
– 1 tablespoon unsalted butter (melted)
– 1 tablespoon warm water
– 1 tablespoon cocoa

Instructions

I. Preheat oven to 350°F. Coat a 10-inch Bundt cake pan with spray.
II. Combine flours, baking powder, baking soda, salt, and 1 cup sugar in a large bowl.
III. Whisk next 7 ingredients (through vanilla) in another large bowl until blended.
IV. Add to the dry ingredients and stir with a spatula until just combined.
V. Transfer 3/4 cup batter to a small bowl and whisk in chocolate, cocoa, and remaining 1 tablespoon sugar.
VI. Pour 3 cups white batter into prepared pan. Dollop chocolate batter over white batter; cover with remaining white batter.
VII. Using a knife, swirl batter once in a continuous S-shape around pan.
VIII. Bake for 1 hour.
IX. Cool in pan 10 minutes; invert onto rack and cool completely.
X. In a bowl, combine glaze ingredients and drizzle over cake. Serve.
